Star-Shaped Cinnamon Biscuits (Vegane Zimtsterne)

I’m not so sure about the popularity of this kind of Christmas cookie in other countries but in Germany, everybody is familiar with so-called ‘Cinnamon Stars’ (Zimtsterne). And everybody loves them. They have a distinct nutty flavour paired with generous amounts of cinnamon in the batter and an irresistible sugar coating on top.

Today I’m sharing my recipe with you. It’s fully vegan and a LITTLE lower in fat than conventional cinnamon star recipes. As always, used a healthy sweetener (coconut sugar) and a healthy, gluten-free flour (buckwheat flour). Original recipes don’t contain buckwheat flour but I think it’s nice to hide some undiscoverable nutrition in everything.

This recipe is also good for when you want to prove to omnivores that vegan biscuits taste exactly the same as biscuits with animal products. In my opinion, there’s no difference in flavour. Perhaps these ones are a little less sweet than the ones you can purchase in stores and at Christmas markets but I consider that a very positive thing. These ones are sweet enough! Especially with the sugar icing.

Ingredients

  • 150 g ground hazelnuts
  • 150 g ground almonds
  • 150 g buckwheat flour
  • 100 g coconut sugar
  • 1-2 tbsp dark rum
  • Optional: rum aroma
  • 1.5 tbsp cinnamon
  • 1-2 tbsp lemon juice
  • 4-5 tbsp water as required

For the icing

  • 70 g powdered sugar (I recommend using powdered sugar made from xylitol)
  • 1-2 tbsp lemon juice
  • A little water if necessary

Instructions

  • To make the dough, combine all ingredients in a bowl.
  • Form a big ball with your hands and put it in the fridge for at least 30 minutes.
  • Preheat the oven to 180 C.
  • Roll the pastry (use your hands first because the dough is a little crumbly, then help with a dough roll) and cut out star-shaped biscuits.
  • Bake for about 7-8 minutes.
  • To make the icing, combine all ingredients with a spoon and spread on top of the biscuits.
  • Let them cool off completely. ENJOY!
