Who’s still eating vanilla ice cream with hot cherries in 2019? Say HELLO to salted caramel nicecream with hot fried cinnamon apples and walnuts! This nicecream variation will be your favorite breakfast recipe this winter. It’s easy to prepare, only requires a few ingredients and tastes like creamy apple pie in a bowl.
You guys know I just love breakfast bowls. There was even a time in my life when I ate nicecream for breakfast EVERY single day. Whether it’s acai, cherry or pumpkin seed nicecream – I love them all. I got to try a lot of variations but the problem with all of them is: They are all cold. Those of you familiar with “nicecream for breakfast” symptoms like feeling extremely cold and sometimes even brain-freeze will know the struggle.

What happens when you mix hot and cold? Right, neutral. Mixing a cold base with hot toppings will allow you to enjoy your nicecream in winter again without the freezing effect. Try it out!
A surprise ingredient…
Bananas, apples, plant-based yogurt. So far so good. Cauliflower? Some of you might be wondering what a vegetable like cauliflower is doing in this recipe. The answer is simple: Texture and taste. Without the cauliflower, this recipe would be extremely sweet due to the date caramel used as an ingredient and topping. Cauliflower has a quite neutral taste when used in its frozen form. So do not shy away! I use it in my smoothie bowls all the time. Alternatively, you could use frozen zucchini with the peel removed.

Salted Caramel Nicecream With Fried Cinnamon Apples
- High-speed blender
- Frying pan
- 2 frozen bananas
- 100 g frozen cauliflower
- 1 tbsp date caramel
- 0.25 tsp salt
- 60 g cashew yogurt (or any other plant-based yogurt)
- 50 g almond milk
Fried Cinnamon Apples
- 2 apples
- 1 tbsp maple syrup
- 0.5 tsp cinnamon
- date caramel
- Cut apple into cubes and fry in maple syrup on medium-high heat until tender. Using a lid on your pan will speed up the process. Add cinnamon and stir carefully to combine. Turn off the heat and let apples sit while you prepare the nicecream.
- For the nicecream, blend all ingredients until smooth and transfer to a bowl.
- Top with date caramel, fried apples, and chopped walnuts.TIP: Leave part of the apples in the pan and only add them to your nicecream bit by bit. This way you'll be able to enjoy warm apples until the last bite.
