
Sometimes, if I feel lazy, I eat this simple avocado pesto several times a week.
It’s literally only three ingredients:
- 1 avocado
- lemon or lime juice
- garlic
The other ingredients are optional but highly recommended. For me, Italian herbs are a MUST in every pasta dish.
I’m such a herb lover, I usually eat about 1-2 Tbs in one meal.
Sea salt is also optional but recommended. Every now and then I do salt-free meals if I feel a little bloated (reducing salt really helps!) but usually I add salt to regulate my low blood pressure.
Okay, and because salt does make every dish so much tastier.
Sometimes, if I feel REALLY lazy, I eat my pasta with only mashed avocado and a little sea salt.
Avocadoes are magic.
And you must be thinking I am crazy about pasta because most of the savoury recipes on my blog are pasta dishes.
To be honest, I never realized I loved pasta so much until I started this blog.
Whatever.
Pasta is life.
Let’s get to the recipe.
Avocado Pesto
Ingredients
- 1 avocado
- 1.5 tbsp lemon juice
- 1 garlic clove(s)
- 1 tbsp italian herbs
- a little sea salt
To serve
- 200 g pasta
- 100 g rocket
- cherry tomatoes
Instructions
- Add all ingredients to a food processor and process them into a smooth avocado cream. Optionally, you can mash the avocado with a fork and use 1 tsp garlic powder (that's the lazy option).
- Cook pasta according to package instructions.
- Drain the pasta, throw it back into the pot and combine with avocado pesto.
- Serve in a bowl together with rocket salad, fresh tomatoes and basil. Steamed peas and dried tomatoes also go very well with this dish. Make sure to try this combo!
