This recipe is going to change your life! It is so easy to make and so incredibly tasty and versatile at the same time. You can use this healthy caramel sauce as a topping on oatmeal, (n)icecream and other desserts or you can use it as a replacement for sugar when baking a cake. Another way to use this raw vegan caramel saue is to make it a dip for fruit slices or a topping for a delicious colourful fruit bowl.
It’s so surprisingly sweet, almost sweeter than honey in my opinion. At the same time, it is made from 100% whole foods covering a wide spectrum of essential vitamins and minerals. A healthy sweetener that tastes amazing at the same time? Gimme that!
So, what is the magical key ingredient in this one? You may have guessed it already… DATES!
Dates have been used for CENTURIES as a healthy snack. Unlike other sweeteners, dates are full of fibre which helps with digestion and regulation of blood sugar levels. Dates are so full of nutrients that it is possible to live off only dates and water for months. An absolute superfood! And probably (nutrition-wise) the best sweetener on the market!
Let’s make some healthy caramel… ?
The two main ingredients are water and dates, which should be combined in a 50:50 ratio. The magical 3rd ingredient is vanilla bean powder which turns the sweet paste into a flavour explosion. When blended up, the finished produce can be stored in an air-tight container in the fridge for up to a week.
An EXTREMELY delicious alternative to plain vanilla caramel is chocolate-carob caramel. To make this, simply add another 2 Tbs cacao powder and 1 Tbs carob powder to the mixture before blending. Very, very recommended! Together with hazelnut butter, this tastes like a healthy version of Nutella (much tastier than Nutella in my opinion because you can literally taste the high nutritional value!!)
